Tofu Mayonnaise

Soft tofu gives this vegan mayo a smooth, creamy texture.



Ingredients


  • 300 g soft tofu

  • 2 tbsp white vinegar

  • 1 tsp Dijon mustard

  • 1/4 tsp sea salt

  • 1/4 tsp black pepper

  • 1 tsp dried rosemary

  • 1 tbsp extra-virgin olive oil









Method


  1. Assemble all ingredients and materials.

  2. Combine all ingredients into a food processor or blender. Blend until smooth.

  3. Taste the mayonnaise and add salt/pepper to taste.

  4. Add extra ingredients to balance out flavours (see below).



Needs More of Something?

Sourness = white vinegar

Boldness = Dijon mustard

Spice = rosemary

Smoothness = olive oil
