Tofu Mayonnaise

Soft tofu gives this vegan mayo a smooth, creamy texture.

Ingredients
300 g soft tofu
2 tbsp white vinegar
1 tsp Dijon mustard
1/4 tsp sea salt
1/4 tsp black pepper
1 tsp dried rosemary
1 tbsp extra-virgin olive oil
Method
Assemble all ingredients and materials.
Combine all ingredients into a food processor or blender. Blend until smooth.
Taste the mayonnaise and add salt/pepper to taste.
Add extra ingredients to balance out flavours (see below).

Sourness = white vinegar
Boldness = Dijon mustard
Spice = rosemary
Smoothness = olive oil
