King Oyster Mushroom Stir-Fry

This delicious stir-fry is a heartfelt tribute to the king oyster mushroom, a vegetable that enchants taste buds with its umami-rich flavour and absorbent character.

Ingredients
Vegetables:
3 king oyster mushrooms, sliced lengthwise
1 white onion, diced
4 cloves garlic, minced
1 cup bean sprouts
1 red bell pepper, cut lengthwise
1 medium broccoli head, chopped into smaller heads
15 baby carrots, sliced lengthwise
1 small piece ginger, diced
Sweet Peanut Sauce:
3 tbsp peanut butter
1 tbsp soy sauce or tamari sauce
2 tbsp maple syrup
1 tbsp red wine vinegar
1 tbsp teriyaki sauce
Potato starch or cornstarch (optional)
Extras:
Small handful sliced or whole almonds
1 tsp white or black sesame seeds
1 tbsp avocado oil or other high-heat neutral oil
4 green onions, diced
Salt and pepper to taste
How to Make It
Prepare all veggies and put them into separate bowls.
Mix peanut sauce ingredients in a bowl; thicken with potato starch or cornstarch if desired.
Heat oil in a large skillet over medium-high heat until beautifully glistening. Add garlic and ginger and sauté for 30 seconds.
Add vegetables according to cooking time, stirring frequently at every stage. First, add the onion and cook for 4-5 minutes until translucent. Then, add the carrots and cook for 2-3 minutes until slightly soft. Add the broccoli and cook for 4-5 minutes until dark green. Add the mushrooms and cook for 4-5 minutes until tender. Add the bell pepper and cook for 4-5 minutes until dark red. Finally, throw in the bean sprouts and cook for 1-2 minutes.
Turn down the heat to low and pour in the peanut sauce. Mix well to combine. When the sauce is well mixed, turn off the heat.
Serve with jasmine rice and top with the almonds, green onions, and sesame seeds. Finish with black pepper.
