Anti-Vampire Hummus

Ingredients


Hummus:

  • 15 cloves garlic

  • 1/4 cup tahini

  • 2 cans chickpeas (400ml each), drained


Spices:

  • 1 tsp ground cumin

  • 1/2 tsp ground turmeric

  • 1 tsp ground curry powder

  • 1/4 tsp ground paprika

  • 1/4 tsp ground cayenne pepper

  • 1/4 tsp ground black pepper

  • 1/4 tsp sea salt


Extras:

  • 1 tbsp lemon juice

  • 2 tbsp extra-virgin olive oil, divided



How to Make It


  1. In a pan, add 1 tbsp of olive oil on medium heat. Sauté garlic cloves for 3-4 minutes, until toasted.

  2. Whip the tahini. Add tahini to a food processor and blend for 30 seconds.

  3. Add the spices (except the paprika) and the remaining 1 tbsp of olive to the processor and blend for 30 seconds. Add the garlic and lemon juice, then blend for 30 more seconds.

  4. Add half of the chickpeas to the processor and blend for 45 seconds. Add the remaining chickpeas and blend for 45 more seconds. The hummus might still be chunky; add warm water in 1 tbsp increments to reach the desired consistency. The spices might get stuck at the bottom of the processor; use a spoon to disperse them.

  5. Taste the hummus and add extra olive oil, lemon juice, or salt.

  6. Transfer the hummus to a bowl. Sprinkle the paprika on top of the hummus and use a fork to create a swirl design on the surface (optional, but why not?).

  7. Serve with carrots, pita, or tortilla chips.

  8. Enjoy!



Needs More of Something?

Sourness = lemon juice

Spiciness = cayenne pepper

Boldness or saltiness = sea salt

Smoothness = olive oil
